I have several of your arrangements, Bob... If you could gin up a book that has a few Easter, Thanksgiving and "Just regular" hymns in your own style, that'd be great!
 
The Easter and Thanksgiving hymns are pretty standard, but "regular" hymns that come to mind are 
 
"Beautiful Saviour"
"When Peace Like a River (It is well)"
"The Lord in Zion Reigneth"
Rejoice, Ye Pure in Heart! 
Day Is Dying in the West 
All Glory, Laud, and Honor 
A Mighty Fortress 
Pass Me Not, O Gentle Savior (In honor of Hovie Lister)
Rise Up, O Church of God 
 
Might be nice to add the service hymns as well.
 
Army - "Over Hill Over Dale"
Navy - "Eternal Father Strong to Save",
Air Force - "Lord, guard and guide the men who fly"
Marines - "Marine Hymn - From the halls of Montezuma"
 
And I suppose we should finish off with the *National Hymn* -- "God of our Fathers"

This church music volume will be medium level of difficulty (not overly
difficult).  And without jazz inflection (except on a spiritual, if it's
appropriate).   Excessively technical display in sacred music is almost
always inappropriate.  -Bob
